6 Ways to Spice Up Your Matzah This Passover

 

1. Matzah Toffee Candy

 

What You Need:

For the Toasted Almonds Pieces

  • 1/2 c almond slices
  • 1 tbsp butter

What You Need:

Everything Else

  • 1 c Butter
  • 1 c Brown Sugar
  • 1 tsp Vanilla Extract
  • 10 oz Dark Chocolate Chips
  • 1/2 c White Chocolate Shavings (If your store doesn’t sell them you can use a bar of chocolate and a vegetable peeler to make your own)
  • Toasted Almond Pieces (Recipe Included)
  • 4 Pieces of Matzah
  • Sea Salt

How To Make It:

Toasted Almond Pieces

In a skillet over medium heat, melt butter. Add almond slices, stir to completely coat in butter. Toast almonds until golden, stirring constantly to avoid burning. Remove from pan to a paper towel-covered plate. Allow to cool enough to handle. Chop slices into fine pieces and set aside.

How to Make It:

Everything Else

Preheat oven to 350 degrees.

Cover rimmed baking sheet with foil and line with a sheet of parchment paper. Arrange matzah in a single layer, breaking the crackers as needed to cover the entire sheet.

Melt butter in a saucepan over medium heat. Add brown sugar, whisking until sugar has dissolved and mixture has come to a boil. Continue cooking and stirring for about three minutes until the mixture is foamy and thick like caramel. Remove from heat and add vanilla, mixing to combine.

Quickly pour the mixture over matzah and use a spatula to spread in an even layer. Bake for 8-10 minutes. Toffee should be bubbling when you remove it from the oven. Place on a cooling rack.

Quickly sprinkle chocolate chips evenly over the toffee. Wait several minutes to allow the chocolate to melt, then spread over the toffee. Scatter toasted almond pieces, white chocolate shavings, and sea salt on top. Allow to cool for about an hour or until the baking sheet can be put in the fridge. Refrigerate for a minimum of 45 minutes.

Remove from fridge and transfer to a large cutting board. Cut into desired size and serve!

 

2. Everything Bagel Matzah

 

What You Need:

  • Everything Bagel Seasoning
  • Lightly Salted or No Salt Matzah
  • Egg Yolk (1 per matzah)
  • Cream Cheese
  • Black Pepper

How to Make It:

Preheat oven to 350 degrees. Put a layer of parchment paper or foil down on your baking sheet and place the desired amount of matzah on top. Beat your egg well and use a pastry brush to lightly coat the matzah, then sprinkle a generous amount of everything bagel seasoning on matzah. Bake for 4 minutes, or until the egg has dried and matzah is golden.

Remove from oven and allow to cool for several minutes. Add your favorite flavor cream cheese, more bagel seasoning, and freshly cracked black pepper. Enjoy!

Note: Use the leftover egg whites for a healthy contribution to your breakfast or snack!

 

3. Matzah Grilled Cheese

 

What You Need:

  • 2 Pieces of Matzah
  • Butter
  • Your favorite cheese
  • Salt
  • Garlic powder (Optional)
  • Cayenne Pepper (Optional)

How to Make It:

Preheat oven to 350 degrees. Put down a layer of parchment paper or foil on your baking sheet. Butter the outer side of each matzah piece. Place one piece of matzah butter side down on the parchment paper, then add slices of your chosen cheese. Sprinkle lightly with salt. (Optional: Add a sprinkle of garlic powder and cayenne pepper for a little kick!) Top with the other piece of matzah, butter side up. Bake for 5 minutes and enjoy!

 

Honey Butter Matzah

What You Need:

  • 4 Pieces of Matzah
  • 4 tbsps Unsalted Butter
  • 4 tbsps Honey
  • Sea Salt or Kosher Salt
  • 1/2 tsp Vanilla Extract
  • 1/8 tsp Lemon Juice

How to Make It:

Preheat oven to 350 degrees. Put down a layer of parchment paper or foil on your baking sheet and lay out matzah. Melt butter in a glass bowl. Mix in honey, vanilla, and lemon juice. Using a pastry brush, thoroughly coat both sides of the matzah in the mixture. Sprinkle with salt and bake for 10 minutes. The honey butter mixture will get frothy and caramelize around the matzah. When you remove it from the oven, use some tongs to remove it from the baking sheet and allow to cool completely on a rack. Enjoy!

 

5. 3 Cheese Matzah Pizza

 

What You Need:

  • Matzah
  • Your Favorite Marinara Sauce
  • Shredded Mozzarella Cheese
  • Shredded Parmesan Cheese
  • Ricotta Cheese
  • Garlic Powder
  • Italian Seasoning
  • Salt
  • Pepper
  • Red Pepper Flakes

How To Make It:

Preheat oven to 450 degrees. Put down a layer of parchment paper or foil on your baking sheet and lay out matzah. Cover your matzah entirely in marinara sauce and sprinkle with garlic powder, Italian seasoning, salt, pepper, and red pepper flakes. Then add a generous helping of mozzarella and parmesan cheese. Add dollops of ricotta evenly spaced throughout your pizzas. Bake for 10 minutes or until matzah is crispy and cheese is melted. Enjoy!

 

6. Matzah Nachos

 

What You Need:

  • Matzah

Suggested Toppings:

  • Cheese
  • Jalapeños
  • Refried Beans
  • Black Beans
  • Tomatoes
  • Guacamole
  • Corn
  • Green Onions
  • Black Olives
  • Turkey Bacon Bits
  • Sour Cream

How to Make It:

Preheat oven to 350 degrees. Put down a layer of parchment paper or foil on your baking sheet and lay out the desired amount of matzah. Bake the matzah on its own for about 4 minutes or until crispy. Remove from oven and allow to cool enough to safely handle. Break up the matzah into chip sized pieces and return to the baking sheet. Add toppings that you want to warm or melt. Bake for about 5 minutes or until cheese is melty and other toppings are hot. Remove from the oven and add cold toppings like the sour cream. Enjoy!
